You learn by doing. Whether you practice with the aid of a cookbook or a hands-on instructor (like Mom), information only moves from theoretical fact to real skill when you put down the book and pick up the sauce pan (or spoon or knife...)
I've learned a lot from watching others cook and from reading cookbooks, but it means nothing unless I get my hand dirty.
I'd say Pollan is mainstream for people who are into the politics of food. But some people are more in tune with book titles than author names. They might recognize "The Omnivore's Dilemma" or "In Defense of Food" but not "Pollan".
And I'll confess -- more than once I thought people were talking about Monty Python. After all, Michael Palin's been on my radar since I was a kid.
