I'd look to Jeffrey Morgenthaler again to see what's the next new cocktail trend. He did a post on the carbonated cocktail and there are bars in L.A. that have started adding them to their own menus.

Handsome Roasters is the hands-down best. I've tried Intelligentsia in L.A. and Stumptown in Portland and just love their beans. But it should be noted that I usually do a pourover. However, they do have special espresso beans as well.
