Peas, carrots, onions, garlic. Ground beef with gravy made from roux. Mashed potatoes with cream or half and half. I like to sprinkle the potatoes with smoked paprika.

Although I did throw in some leftover zucchini from our CSA box from last week. It was wonderful.

How to Prepare Breaded Cutlets

I don't necessarily agree with a 30 min. resting time. Not to mention, if the coating was just flour, it would have pasted up by then.

Usually, a 5-10 min rest is sufficient for me.

I use pie tins as breading stations; we seem to have an abundance in them in my kitchen due to my wife's on again off again baking jags.

How do you brew your coffee?

Bodum french press.

Boil Brita filtered water. Take off heat. As soon as the kettle is off the heat, coarsely grind the beans in a spice/coffee grinder. 2 TB course grounds per 6 oz water. By the time the grounds are in the press, the water is ready. Pour water over evenly. Stir with chopsticks. Set timer for 3.5 mins. Plunge slowly and evenly.

I like my coffee only slightly bitter, so I use condensed milk as a lightener/sweetener. 1 TB milk works for my 18 oz cup of morning joe.

I respectfully disagree. While Pike Place does have its share of tourist trap stalls, places like Sosio's bring the goods.

Do you like cooking to music?

Music is an integral part of almost any activity I am involved in, and cooking is no exception.

I find that solid tempo music is the best. No dramatic lulls in tempo to slow down, nor balls out ferocity to overwhelm.

On the rock side I find most Rush, Ac/Dc, Clutch or even Alice in Chains to be fitting.

On the Metallic side of things, Candlemass, Blind Guardian, Manowar, or early Sabbath.

The pinnacle of house cleaning/cooking music? Van Halen's 1. Outrageously suitable. Never leaves my player for very long.

Recurrent food related injury

I burn my mouth on Hot Pockets. Every time. I only eat them 3-4 times a year, and I am fully aware of their lavaliciousness, yet they still seem to harbor ill will towards the roof of my mouth.

Fry oil seems to take perverse pleasure in singeing my forearms.

Chronic dry eye from chopping onions prodigiously.
