I use whole grain flour as much as possible. After discovering Whole Wheat pastry flour I have found that I can use it even more now. I love my whole wheat pizza dough and whole wheat pie crust!
I am proud to say that I could look at the muffuletta and know that it is the sandwich served at cochon butcher. It is definitely one of the best in NOLA. Extra olive salad is a must!

It has to be the Cochon De Lait poboy from Walker's BBQ at Jazz Fest. The Cochon De Lait is an old Louisiana tradition that I have been enjoying since I was a child but there is no better way to enoy a roasted pig than on a sandwich as Jazz Fest. I wait all yearlong to get the succulent roasted pork with the cooling creole mustard cole slaw and I always add a dash of Crystal hot sauce. I only live an hour away from New Orleans but I wait until Jazz Fest to get the poboy because it makes it special to only get it once a year. Now that I am talking about it, I may break down and drive to their restuarant soon.

This post swelled me with pride for my state. Here in Louisiana we definitely live to eat! I agree with your choices for 36 hours but would also recommend you check out Sucre for gelato and other delicious sweets, a muffuletta from Central Grocery and a seafood platter at Drago's. My favorite spot is definitely Restaurant August.
