Cook the Book: 'The Vegetable Dishes I Can't Live Without'
my mom's eggplant with lentil cooked briefly.. than she adds tomato, garlic i think.. lol.. some vegitable stock, and breadcrumbs... and sherry.. i think thats it.. than sticks it in the oven for 45 minutes and it turns into a sorta loafish type thing and we eat it on that medditerranian flat bread with olive oil or sometimes on bowtie pasta...
