Getting garlic/onion odors out of wooden cutting boards?

First make sure you clean the board well...the Kosher salt and lemon is actually a good start...the salt does 2 things...it acts as an abbrasive and it draws moisture out of the block. The lemon is actually naturally anti microbial. There is an oil called Emmets elixir which actually contains lemon and rosemary extracts...supposed to be because it kills the bad guys but I like it because it smell so good.

What do you chop on?

Marble and Granite countertops are not the thing to be cutting on. Ruins the knife AND is dangerous because the blade can "skip" sideways and do serious injury. There is a reason butchers cut on Butcher Block.

As far as bamboo is concerned I tried them and found them less durable and they tend to crack if you're not careful.

Also thoise white plastic boards are actually petroleum based and recent studies are showing that they actually can harbor and grow bacteria as the board wears. I was reading Michigan Maple Blocks web page and they have alot of information about choosing a cutting board. Of course they want you to buy one of thiers but they still have good information.

Butcher Block Care

I suggest a product called Emmet's Elixir. The ingredients seem to be Mineral oil, Bees Wax and Rosemary and Lemon oil. The information on the web page say it is NSF certified. NSF are the people who make sure product for commercial foodservice use are safe so that's that.

Anyway the rosemary and lemon oil are naturally anti-microbial so along with conditioning your board or countertop it also gives an added layer of protection.

I use it on all my wood cutting boards and they are doing great...and they smell good.
