The Nasty Bits: Tongue Tied

I did a three course tongue-tasting menu for my friends consisting of tongue sandwich canapes, tacos de lenga, and tongue croquettes. Each dish was a hit, and I think my friends were surprised to see just how tasty and tender tongue could be. Here's my blog about the venture:

About: Studying theology and working on a dissertation on eating disorders. I love cooking and eating dishes that are off the radar of the normal American palate, and I am recently obsessed with offal.

Favorite foods: Seared tuna, Steak tartar, Pan-seared scallops, foie gras pate, tomatoes just picked off the vine, ceviche, uni, Jelly Belly jellybeans, big bold red wines, tawny port

Last bite on earth: An appetizer of pan-seared sweetbreads and foie gras pate with baguette slices, tuna tartar with a side of mango salsa, and the last bite would be a sip of something along the lines of a 1981 Chateau Mouton Rothschild.
