Environmental Group Sues FDA Over Antibiotics in Animal Feed

@Mohican
"I think the main qualification of being an environmental nut is thinking that nature and the "natural" are better by default and anything man creates is inherantly harmful and evil"

This isn't about demonizing antibiotics for not being natural, this is reasonable concern about antibiotics in animal feed causing actual health threats.

How to Make Bagels at Home

@DrGaellon
And that's why I haven't tried lye for making bagels. I just don't know enough about it to start working with it.

Over the weekend I made the Reinhart bagels. They came out better than last time I tried them: http://imgur.com/a/4Fl5l

I've made the Reinhart bagels and they were delicious, but I should have made a double batch. They were gone too quickly.

I too am curious about the pan. What's the deal with blue steel? Why would you choose it over, say, a typical cast iron skillet?

A Guide to Handling Fresh Bhut Jolokia Chiles, the World's Hottest Chile Pepper

I consider capsaicin's heat another basic taste alongside sweet, sour, bitter, salty, and umami. These peppers have their own special flavor and their own heat. It takes a certain degree of skill to utilize the heat and flavor while preserving the harmony of a dish. Spicy food is not just for macho cred.

Big Apple Barbecue Block Party 2010 in Photos

I had to go both days to hit all the stands I wanted. Even with the fast pass, the lines were pretty long. In previous years the fast pass let me just walk up and get a plate without waiting most of the time.

My Highlights and Notes
- The brisket at Jack's Old South was mad good. Super beefy and fatty and delicious. The baked beans with chunks of peach were fantastic too. For me this was the stand-out place.
- Big Bob Gibson's pulled pork sandwiches were excellent in every way. I didn't expect anything less.
- Ed Mitchell's 'The Pit' ran out before I could get any on Saturday, but I got some the next day. Delicious as always, but they didn't have any cracklins!
- Finally tried pimento cheese for the first time from Jim 'N Nick's. It was very tasty and worked well with the spicy sausage.
- The mutton from Moonlite Bar-B-Q was a surprise. I had forgotten it was on the menu and went up thinking it was pulled pork. It wasn't until I took a bite that I realized! I wish they would have gone easy with the sauce so I could taste the meat better (many of the stands made this mistake).
- Martin's Bar-B-Cue had good pulled pork sandwiches, but they came with sauce and coleslaw on the sandwich that made it a little too sweet. The pickles on the side were even sweeter.

Equipment: How to Buy, Season, and Maintain Cast Iron Cookware

I love my Wagner skillet. I got it for almost nothing from a dude on craigslist. It as nasty at first but with a little cleaning I found it already had a decent layer of seasoning. Recently I let the seasoning on the bottom lapse and now the bottom is a bit rusty.

Equipment: How to Buy a Wok

Reading my mind? I was up all last night trying to decide what kind of wok to get.

These woks, available from eBay seller Taost, caught my eye. They are made of thin iron and are hand-hammered into shape (not cast). I haven't seen iron cookware like this before. Usually it is much thicker. Are these the ones that are too fragile?

Poll: Do You Call Them Jimmies or Sprinkles?

I first heard them called "jimmies" earlier this year. I thought they were universally known as "sprinkles" prior to that. I would not be surprised if "jimmies" originally had racist connotations. "Hundreds and thousands" sounds pretty clumsy to my ears, is there a shorter term that people use instead?

Seriously Asian: Natto

I knew what natto was before I tried it, so I knew what I was in for. I still find it hard to believe someone could actually enjoy it. I've thought that maybe the natto I tried wasn't a good representation of the food since it was at a "meh" sushi place, but I don't know how much I care to find a better one. The strong ammonia taste is something I wouldn't mind never experiencing again.

Cutty's Brings a Signature Sandwich to Boston

It is very hard to go wrong with any of Al's sandwiches. The Bizzy Bone is one of the favorites and it is really good. You can also order a "Hush" and he'll improvise a sandwich on the spot. I've yet to try this, but he told me he guarantees satisfaction.

I'm not kidding about the wait, either. You can call ahead to avoid it.

Cutty's Brings a Signature Sandwich to Boston

Wan Convenience Store/Al's Deli is one of Boston's best kept secrets and is delicious beyond words. Al is a true master of the sandwich-making craft. He is also a mad cool guy and stands behind his sandwiches 100%. The fact that his creations have gone unmentioned on seriouseats is shocking. The only downside is the LONG wait you have to endure, but trust me it's worth it.

Also, All-Star Sandwich Bar might be hit-or-miss, but you cannot miss ordering a Texas Reuben. It's their Tuesday special sandwich and it's quite good.

Gadgets: Digital Scale with Measuring Cup by Taylor

This seems like a terrible idea. The fact that you can't get it wet really is a massive deal-breaker. You can easily use a regular scale with ANY measuring cup, so you wouldn't have to abandon you OXO one. You can also use other vessels such as mixing bowls. Get a decent kitchen scale with a suitable weight capacity, a tare button, multiple unit modes and you're set.

I use the My Weigh i5000 and it does everything I need.

5 Ways to Eat Chocolate for Breakfast

Pancakes can absolutely do dessert duty. In fact, I think if it weren't for them already being a common breakfast food, they would be better reclassified as a dessert item. Think about it! They are cakes. Maple syrup, powdered sugar, chocolate chips, berries, butter, etc. Very rich and sweet.
