Sauce for Ravioli?

Not sure how weird this is.. but recently I've been sauteing greens, like Swiss chard or spinach, with lots of garlic and eating that over ravioli. It's GREAT... and a good way to work my way through all my CSA greens.

.. but I am loving these ideas - I'm going to try some!

what do YOU substitute to make something healthier?

Oil - applesauce or coconut oil
Sugar - agave or honey
White flour - whole wheat pastry flour or white whole wheat
Sour cream - yogurt
Butter - 1/2 butter 1/2 coconut oil
Flours - 1/2 almond meal 1/2 flour

on and on and on... i love substituting!

Love this! Our box (in LA through South Central Farmers) came this week packed with chard, kale, spinach, green onions, beets, radishes, parsley... We are always looking for more ideas on how to use them all up!

killer healthy granola recipe

There is a great recipe here:

6 cups rolled oats
1 cup shredded coconut
1 cup raw wheat germ (I substituted flaxseed meal)
3/4 cup peanuts or other nuts (I did half raw peanuts, half raw walnuts)
1/2 cup raw sunflower seeds
1/2 cup sesame seeds
combine in a large bowl

1/2 cup honey
1/3 cup oil
1/3 cup water
1 teaspoon vanilla
mix together and pour over oat mixture. stir well. spread in a thin layer on baking sheets. bake in preheated oven at
325F for 10 minutes. stir and bake another 5 minutes. stir again and bake 3-5 minutes. watch carefully to prevent
burning. cool.

1 cup raisins or dried cranberries
add and store in airtight container.

my favorite summer recipe is chocolate pie, i just make some chocolate pudding and put it in a pie crust with whipped cream on top, then chill it, it's nice and cold on a hot summer day!

My favorite summer recipe is a cold veggie pizza. Not with tomato sauce and stuff, but a croissant roll crust with a cream cheese dill spread on the crust and then broccoli and cauliflower and whatever other veggies you can get cut up small. Finished up with a nice bit of cheddar cheese on top.
