America's Next Great Restaurant: anyone still watching?

I wish I could stop watching, but I'm a sucker for truly terrible reality TV. I haven't loved/hated a show this much since On The Lot.

Would You Eat Human Cheese?

I'd try some if it were offered to me, but having tasted human milk (my own), I can't imagine it makes very good cheese - it's far sweeter than cow/goat/sheep's milk.

Alton Brown Says No to Stuffing the Turkey

Cook's Illustrated figured out years ago how to get the best of both worlds - butterfly the turkey and roast it (flat) on a rack set over a pan of stuffing. The drippings flavor the stuffing AND the breast doesn't dry out before the legs are done. Brilliant!

@Adam - thanks, I'll give them a call. Key Food, who knew?

Making Your Own Bagels

If anyone knows where to get high gluten flour (doesn't even have to be King Arthur) in New York, I would be so happy! The shipping from King Arthur costs as much as the flour itself, and the bagels wind up costing more to make than to buy. (And since I live within walking distance of Terrace Bagels, homemade ones only make sense if I'm saving money too.)

King Arthur Flour also sells barley malt syrup, and one jar will last for dozens of bagel batches.

What Are Your Recipe Deal Breakers?

Anything that requires me to visit more than 2 grocery stores is out. I'll make substitutes where I can, but I have a one-year old - time is a luxury I'd rather not spend grocery shopping.
