Vegan: Garbanzos con Espinacas y Jengibre (Spanish Chickpea and Spinach Stew with Ginger)

I've made this 5+ times and it is really awesome. It seems like a lot of ginger but it really melds well with the tomatoes. Just as good with frozen spinach too.

The Vegan Experience: Crispy Kung Pao Tofu

@mikelipino Hunks of Kenji's wife would probably make this dish non-vegan.

Vegan Sweet Potato and Two Bean Chili With Hominy

Tastes delicious and my apartment smells great. My first time eating hominy - good addition! I took the seeds out of all the dried chilies and it wasn't too spicy.

Squash, Shiitake, Kale, and Kimchi Stew

I thought you weren't supposed to boil miso

Black Bean, Corn, and Red Pepper Salad with Lime Cilantro Vinaigrette

This is great. I've made it twice, the second time i charred the corn and it was even better.

Stuffed Roasted Poblano Peppers with Cashew-Chipotle Sauce

So delicious. I'd second the comment that 3 chipotles was a bit much. But so so good.

In a pickle

Mmm I like the idea of radishes and pearl onions. Those will have to be next.

@bobcatsteph3 Brussels sprouts? Really?

@Lorenzo Haha good point.

Any advice for pickleing sweeter things? I like the idea of roasted red peppers or cherries.

Vegan Sopes with Refried Beans and Salsa Verde

Very good - even better with pickled red onions.

How do y'all stay thin?

I don't eat the standard american diet. :) I eats lots of delicious fruits and veggies every day. Also, I don't drink any of my calories other than booz.

Potatoes: do you prefer them waxy or floury?

Floury all the way. French fries, roasted, hash browns. I wonder if there are waxy sweet potatoes.

Bagels: Top or Bottom?

I like the bottom way better! My favorite long island bagels have wayyy more "topping" on the bottom anyway. More like a covering than a topping. I find the first sign of a bad bagel is a naked bottom. If you know what i mean.

Roasted Brussels Sprouts and Shallots with Balsamic Vinegar

This dish got rave reviews at thanksgiving yesterday! I wish I'd made a double portion to have left overs.

Serious Salads: Warm Quinoa Pilaf Salad with Shiitake Mushrooms, Carrots & Pecans

Quick and easy. I love pecans and this was a great use of them. What makes it a salad though?

Ask a Chef: Best Way to Make Turkey on Thanksgiving?

Now I'm just confused about basting. I thought it was generally considered a bad idea because opening the oven lets out moisture and dries out the meat. What's the benefit? What does it really do?

Seasoning Cast Iron with Flaxseed Oil?

I'd just make sure to do it on a cold day. You're pretty much cranking your oven on full for many hours.

Seasoning Cast Iron with Flaxseed Oil?

I did it and it works great. It is just very time intensive.

In a pickle

I recently discovered how easy it is to make pickled red onions. It's got me wondering what the best things to pickle are. What's your favorite item to pickle and what do you pickle it in?

arsenic in rice

I haven't seen a thread on this yet. What does everyone thing about the latest rice news? Are we being overly cautious or is this a huge problem?
Have you changed how much rice you eat or how you cook it? Tonight I cooked up some brown rice by rinsing it and then cooking it copious amounts of boiling water. Apparently, this should help remove organic arsenic in the rice.
