I've made this 5+ times and it is really awesome. It seems like a lot of ginger but it really melds well with the tomatoes. Just as good with frozen spinach too.
@mikelipino Hunks of Kenji's wife would probably make this dish non-vegan.
Tastes delicious and my apartment smells great. My first time eating hominy - good addition! I took the seeds out of all the dried chilies and it wasn't too spicy.

This is great. I've made it twice, the second time i charred the corn and it was even better.
So delicious. I'd second the comment that 3 chipotles was a bit much. But so so good.

I don't eat the standard american diet. :) I eats lots of delicious fruits and veggies every day. Also, I don't drink any of my calories other than booz.

I like the bottom way better! My favorite long island bagels have wayyy more "topping" on the bottom anyway. More like a covering than a topping. I find the first sign of a bad bagel is a naked bottom. If you know what i mean.

Now I'm just confused about basting. I thought it was generally considered a bad idea because opening the oven lets out moisture and dries out the meat. What's the benefit? What does it really do?
I'd just make sure to do it on a cold day. You're pretty much cranking your oven on full for many hours.
I did it and it works great. It is just very time intensive.
