My husband is lactose intolerant and we have had great success with making our own sweetened condensed soy milk. You can find recipes online, you basically add sugar and cook it until it's about 1/3 the volume and slightly caramel colored and thick. I plan to try this recipe with that and soy creamer for the heavy cream.
We use coconut milk as a sub a lot and I'm not sure I would want that oily quality it can have in this case.
