Serious Eats: AHR's Profile

A similar Serious Eats article two years ago favored Michigan Russet, Orin, and Gala. Would it be worth doubling back to include the first two in your testing and settle the issue once and for all? Did you perhaps exclude them because they were not available at local greenmarkets?
