organic caviar Per Se from Spain

Hi, I've just read A. Petrossian's recommendations as to how to buy caviar.
Would anyone care to comment upon the Spanish organic caviar 'Per Se' and, in view of the fact that the longer the 'tin'
time the more changes in weight and taste,
what? is the optimal period between the harvesting and the purchase
(NOT 'best by'!).
