Healthier substitutions for potato recipes?
In my house we eat a LOT of potato dishes, but I know they're not necessarily the healthiest recipes. The main problem is that we use a ton of butter and heavy cream, which I know I could cut out, but you just don't get the same level of creaminess. I'm looking for some tasty recipes that mimic mashed or baked potatoes, but substitute the potatoes for other main ingredients, like maybe cauliflower or white bean puree. Any suggestions?
