Baked Caramel Corn Recipe

My mother makes this every year during the holidays and it's highly addicting. I had her write the recipe down and I'm putting on here verbatim. If you have any questions let me know!

About This Recipe

Yield:1-20 depending on who gets it first!
Active time:20 mins.
Total time:1 hour
Special equipment:Roasting Pan (like you'd do a turkey in or foil equivalent.)

Ingredients

1 cup margarine
2 cups brown sugar
1/2 cup white karo syrup
1 tsp. salt
1/2 tsp. baking soda
1 tsp. vanilla
6 qts. popped popcorn (the real stuff, old school, NOT microwave)

Procedures

Preheat oven to 250 degrees

Pop popcorn and measure 26 cups into the roaster pan (make sure there's no seeds!)

In a pot,Melt butter, stir in brown sugar, karo syrup and salt. Bring to a boil, stirring constantly.

Reduce heat and let simmer for 5 mins. without stirring.

Remove from heat, add soda and vanilla, stir in well.

Pour over popped corn and mix well.

Put in 250 degree oven for 1 hour, stirring with a wooden spoon once every 15 mins.

After 1 hr., remove and turn out popcorn on wax paper and spread out. Let cool, store in airtight containers.
