Science and Fruit Cake

My husband LOVES fruitcake. I found a recipe that he seems to like. I always want to make it better.
I've read much about aging, is that important? Some recipes don't require aging.
Brushing with rum or other spirits after baked. Is that more for flavor or preservation?

If and when should I brush with Rum.

Will freezing change texture.
