What should I do with all these persimmons?

A friend of ours with a major green thumb keeps us supplied with fresh produce throughout the season. We love her for it. Now she brought us a bag full of beautiful yellow/orange persimmons. Some still need ripening time, but what can we prepare with them when the time is right?
