How long does it take jelly (preserve) using pectin to set?
I read in a serious eat article (see link below) that it can take 2 weeks for mulled wine jelly made using pectin to set. I just made a batch and it just 2 days ago and it looks like sugar syrup with wine flavour - is that normal?
Why does it take 2 weeks to set?
