jam ,chutney and canning

Hi,I have just finished the canning process on some chutney jars and noticed that the chutney appears to be much softer then it was and should be before the canning process.A few weeks ago the same thing happened to a batch of red berries jam.Does anyone have any answers why this happens?Help in solving this would be very appreciated.Thank you.
