Veggie Katsu from Haru Hana

When I was in NYC my friend took me to Haru Hana in KoreaTown. I ordered a veggie katsu that to this day makes my mouth water just thinking about it. I believe they said the recipe is pumpkin based. I haven't been able to find anything like it in the Midwest, and I've tried. Is anyone familiar with this dish and can you compare it to something else I could ask for in the restaurants in my area? I try to describe it to them and keep ending up with tempura, which is a tasty dish but not as mouth-watering as that veggie katsu was. As a last resort, if someone could point me to a not-too-difficult recipe, I might even try to make it myself. (I love to eat, but not so much to cook.)
