What to do with half of a salmon?
I bought half of a salmon. It is not a side of salmon, instead it is the tail half of a whole salmon. It is a little over 4 lbs, skin on.
How do you suggest I prepare it? I was thinking of treating it like I would a smaller whole fish. Using a cedar plank on the gas grill. Are there any special considerations for such a large piece of fish? My concerns are that 1 side will cook and the other won't and it is so large that flipping it might be a challenge once it starts to cook.
