Baking Substitutes

I really want to make some sort of "special treat" for the children I babysit but lately I think their mother has been getting mad about the amount of sweets they've been eating. So I was thinking if there were any sneaky shortcuts or healthy substitutes I could use to make something tasty for the kids. Does anyone have any suggestions? I've heard a lot about apple sauce or splenda but I figured you all would have better ideas.
