Corned Beef Matzo Ball Soup

I recently made a bunch of corned beef, and after I ate all the leftovers as hash, I still had a bunch of the cooking liquid. I also decided to render a bunch of the leftover fat down. I ended up using the fat from the beef instead of schmaltz to make some matzo balls, which I cooked in the corned beef broth. It was totally delicious, and a lot milder than I expected. Since I bet a bunch of you just made some corned beef, I thought you might appreciate some ideas for the stranger leftovers.
