I'm planning on doing a short Food Lab article about making the best wonton soup. I'm talking old school, New York-Chinese-American style wonton soup. Clear-ish broth, pork wontons, perhaps a bit of cabbage and scallion. Know what I mean?
I'm in the "primary research" phase right now, which translates roughly to "eat as much wonton soup as you can from as many different places as you can."
