Where to Seriously Eat in Rome.

I'm a foodie and so is my GF. I am going to Rome for 7 days with my GF in September and I would really appreciate any help from anyone about advice on where to go for outstanding food. Money is not that important (1-2 expensive meals is fine): I just want to eat some of the best food in Rome while we're there for 7 days. Also if anyone knows of anything must-see that I won't find in a travel guide we'd love to hear about it! Thank you so much!
