Headed to Texas. Where do I eat?

I'm hitting up Grapevine, Dallas, Houston, and Austin next week. Have car, will travel for food. Let me know what I can't miss!

And if any of you Texas-based Serious Eaters wanna meet up for a bite or a drink, I'm sure I'll have more than I can handle. Extra mouths are welcome! (Seriously).
