Ways to Expand the Palate of Picky Eaters?

Okay, so I have a family of very picky eaters. Seafood is completely off limits for the entire household, as is pork (we have no problems with non-kosher), vegetarian, beans, spicy, and basically anything green. The extent of their ethnic eating is Italian. (nothing wrong with that but it's a little tiring)

Any ideas to educate their palates?
