Varieties of mushrooms

Hi, I'm Chinese and I've grown up around varieties of mushrooms and fungi different from what most recipes are serving up, such as cloud ears, chicken drumstick mushroom, shitake, golden needle, beech mushrooms, ... Having lived in UK for a bit of time, all I see are portabella and 'soup mushrooms' and white capped ones.

I'd love for SE to feature mushrooms and different ways to cook 'em and eat 'em.

Do you like mushrooms? What were they like and how were they cooked? What's the best mushroom dish you've had?
