Question about bread and eating healthy

Lately I've been eating healthier and trying to lose weight. I'm going towards more of a lifestyle change, because drastic diets have not worked.

I've started shopping for the majority of my food at a local farmer's market, because it keeps me from buying processed junk and I would prefer to spend my dollars locally (but that's another topic...).

Now, I've been buying bread (12 grain and Russian black bread) from a local baker there that doesn't use any preservatives or mixes. I'm assuming this is healthier than most store-bought bread, but in terms of weight loss, will this help at all? I'm not expecting that eating fresher bread will result in fewer calories, but are preservatives a factor in weight loss? Just looking for some opinions and discussion, most Google searches haven't helped me much.
