I had a delightful houseguest over the past weekend who used leftovers from the previous evening's meal as omelet fillings for the next day's breakfast.
I'm sure it's occurred to most of us in to use leftover protein or veggies in omelets. While those were part of the picture that morning, we're also talking about unexpected breakfast ingredients including dip, and even some pasta.
We dubbed the creation "Humpty Dumpty" as it was a rather oversized and odd egg concoction. Turns out the Humpster was surprisingly yummy!
