I am on a quest to eat more healthy food, and like many of us, I don't have a ton of time or money. Further complicating the dilemma is the fact that I cannot eat plain cooked eggs in any form (like scrambled, poached, omelet, or frittata; even quiche is no good). I'm not allergic and I can eat eggs in things like cake or French toast; this is instead a deep-seated taste aversion that I've had for over twenty years and it's not going away.
What I'm looking for are your best tasty, healthy, easy to prepare, and reasonably cheap recipes that don't prominently feature eggs. I mean, I see a lot of superfast egg-based recipes, and I'm sure that a lot of people might just whip up an omelet or frittata with leftover whatever and an egg base when they want something tasty and fast. I can't do that and it's driving me crazy.
