Rancid coconut milk

Hey,

I keep running into an issue with coconut milk: I buy canned, full-fat coconut milk from Whole Foods and use it for smoothies. Somehow it often develops a bitter/soapy flavor. Has anyone else run into this? Anyone know how I can prevent it?
