I got to go on vacation a while back with some friends to the Virgin Islands, their family are locals, so they did a great job taking us around and showing us the highlights. One trip in particular we went to a place where I had this great jerked fish dish that came with a coconut green curry sauce on it that really made the dish. I was a bit caught up in the festivities and the experience, and didn't have the forethought to ask around about the meal. The place didn't have indoors, it was a beach hut, so I'm pretty sure they don't have a website.
I've spent a good bit of time hunting around online and haven't found anything quite like I had down there. I tried an approximation paring down what I would normally do for a Thai Green Coconut Curry, but it didn't taste quite right.
So I was wondering if anyone had any recipe resources, sites/cookbooks/etc, that they'd recommend?
