I was trying to explain to somebody how to make pasta the other day, but I just couldn't find any words to really describe how the dough should feel, the flour's texture and flavor differences (durum, semolina, etc.), the amount of time to cook it (depending on the shape), how long to let it rest after kneading, how long to let it dry (or not), etc. There are so many things to take into account that you really can't explain without them actually getting their hands in there and experiencing the process first hand. Plus there are different variations for different sauces (amount of whole eggs or yolks, water, no eggs at all, etc.).
Anyway, are there any dishes/recipes/techniques that are almost impossible for you to explain to somebody how to make without them actually getting their hands dirty?
