Homemade salad dressing in the fridge

I like to make mason jars of dressings (they seal well for good shaking) but I tend to make at least a week's worth at a time. When I do, I store it in the fridge and the oil solidifies. Is it ok to keep it out on the counter or do I just have to let it come to temp before using it?
