Gluten over Tofu?

Now that Kenji is embarking on his vegan diet, I also came across this article that claims that eating gluten is 'healthier' than tofu. Of course, this won't apply to celiac people, but sometimes I find gluten (especially in bread) is be quite heavy, which I've experienced particularly in Whole Foods' baked bread.

I do love my tofu (not the processed type) and I don't know I'm going to jump on the wagon and start to see more gluten over my tofu or tempeh.
