Roast skinless turkey

I received a 12-14 lb young turkey from my friend's farm for Christmas. It is frozen and all of the skin has been removed. How best to roast and keep moist? is brining a good idea and what about about keeping it moist while it is roasting in the oven? Any suggestions gratefully appreciated. Thanks. bb
