Sablefish Cheeks?

So I have a bunch of Sablefish (sometimes called Black Cod, but it's not a cod) cheeks that need to get eaten, anyone have any favorite preparations?

I stir fried some last night and served with a seaweed salad which was quite tasty, but I imagine there are some other fun things you could do with them. I'm thinking battered, deep fried and stuck into a taco wouldn't be too shabby as the "tenders" are perfect size for a fish taco.
