Mexican Shrimp Cocktail (Coctel de camaron)
This is how the little local Mexican Restaurant Burritos Mexican Grill prepares coctel de cameron. There are many that may not be familiar with this traditional style, but this is how it's prepared in this location and slight variations of salsa, jalepenos, or sauce are found.I

Ingredients
20 deveined, shelled, and boiled medium shrimp
1 Hass avacado, pitted, and sliced or made into chunks
3oz chopped onion
3oz chopped tomato
chopped cilantro - I use a good hand full
1 fresh lime
ketchup
1 tangerine or manderine Jarrito soda work even better
hot sauce - whichever you prefer - many prefer Valentinos
jalepenos - optional
Procedures
Shell and devein 20 medium shrimp.
Bring water to boil. Cook shrimp until pink and just tender. Remove shrimp and place in ice water.
Chop onions, cilantro & tomatoes and add to an appropriate size bowl. Add 1/3 -1/2 cup ketchup to the bowl, then add equal amount of Jarritos maderine soda. (less if you prefer more thick)
Add your favorite hot sauce and slowly stir ingredients together.
Place shrimp and avacados in a large margarita or martini glass. Add mixture over top of shrimp and avacado, garnish with sprig of cilantro, sliced jalepenos, or wedge of lime! Enjoy
