House-smoked, House-brewed, House-this, House-that

I see Gramercy Tavern will be at the SE sandwich fest w/ their house-smoked turkey sandwich. we went to the bar at Blue Hill last year and I had a vodka tonic-they only serve their own house-made vodka, which sucked. If I can make it, I'll hit the SE sandwich fest, if only to see if the house-smoked turkey is any good.

Is it necessarily better if made in-house? I know Barney greengrass etc. use smoked salmon from Acme which is damn good.
