Best Canned Coconut Milk?
I made a Thai curry this weekend from the excellent book Thai Street Food and was disappointed by the results. Not because of the paste (which was fragrant and complex), but because of the canned coconut milk I used. It was flat and dull and lacked the rich coconut flavor you associate with a good curry. In retrospect I should have taken the time to make it from scratch as it's totally worth it, but it takes forever. I know I'll never get the same from a can, but are there any good brands that are an acceptable substitute?
