What do you do with the vegetables from making vegetable stock?

I have a question that has been bugging me for a long time. What do you do with the vegetables you use to make vegetable stock (or I guess what do you do with the meat from meat based stocks)?

The recipes always say discard the vegetables which is very hard for me to do because you're throwing away food! The most recent time I made stock I froze the vegetables because I couldn't decide what to do with them at the time. Later I just ended up composting them to make some extra space in the freezer.

Do I just need to give in and toss the vegetables?
