SE has noted that homemade soda is a current trend. I've been making my own for a couple of years, because bottled soda is just too sweet, but I haven't really hit on any formulas that I love.

Currently I'm trying to make a bitter lemon, but the first try just tastes like fizzy lemonade. Does anyone know where one could buy quinine? I'd like to make my own tonic water, too. You used to be able to buy it at drugstores, but the gov outlawed that years ago.

I used lemon zest and lemon juice in the syrup - maybe I should leave the juice out?
