Budding gardener with bitter greens.

I'm new to this whole gardening thing. I've been trying hard to grow my own vegetables and herbs, but like a lot of budding growers I didn't really do my research first.

I placed my salad greens in direct sun on my balcony. Not only did they freak out and grow like you wouldn't believe, they've also gone bitter when I didn't want them to be bitter. Is there anything I can do about it? Or do I just need to start over?
