Can't Understand Red Velvet Desserts...

Today, when given the choices between chocolate marshmallow, chocolate/vanilla, and red velvet cupcakes, I still don't understand the appeal of the latter flavor. I see it just red food coloring and loans of shortening. Chocolate triumphs IMHO. Am I missing something??
