I has a glut of eggplant from my CSA at the end of last summer. With no time to eat it all before it went bad, I roasted the eggplants, scooped out the insides and froze it.

Now, with CSA season approaching again, I am trying to empty out my freezer of last year's goodies.

I am looking for ideas of what to do with a 2 pint container of roasted eggplant innards (other than a dip). Any ideas?
