What Makes Sushi Good
There's one sushi place where I live that has a killer fried oyster roll. But, as I was chowing down on it last night, it occurred to me that I'm not sure how my palate differentiates good sushi from bad sushi.
The only thing I know for sure is, I like when the rice isn't dry. But can't think of what else, exactly, makes it good or bad. Thoughts?
