I just bought 3 lbs. of Chourico-Now what do I do?

Long story short- I live in the sticks, can't buy chourico here-went to the big city today-bought 3 lbs. Now what do I do? I've had it before and love it-but this is the first time I've had a chance to cook with it. Does it freeze well?
