Finally, a great chicken broth. . .now what?

After many, many failed attempts, I finally succeeded in making a great chicken stock. It's been defatted, strained 2x, and is ready to go. Now I want to make something delicious with it. Sure, I could do chicken soup or just freeze it in portions, but I'm anxious to try this in a recipe application now. I am thinking risotto, but would love to hear your other suggestions!
